What disk break pads should I go for? Lovely organics or horrible sintered?

Organics won't last especially in the wet. Sintered will last much longer and perform in the wet. Organics are better breaking but won't last as long.

I've had good results with the very reasonably priced pads from superstar components, if that helps...

yeah, that's what I was looking at :D just more the compound which i was unsure of.

For the marginal extra price, I went for sintered. Seem fine.
